Andy Perkins and I hopped into the car around 7 am and were off to visit Claudy Pack and Pack Dairy Farm in Polk County. We towed a wagon behind us with a large stainless steel tank. Andy and his wife, Jen, make cheese as Looking Glass Creamery; they’re true artisan food entrepreneurs. Because they don’t have their own dairy animals, they haul a milk tank to local dairy farms to pick up the milk they need to create their products.
