Making Fish Sauce, Fish Fertilizer, and Garums

How fitting, that fermentation is as applicable for your gut ecosystem as it is for the soil in your garden. In this class, we will truly explore the parallels between worlds as we explore the history and modern preparation of garums, which are essentially enzyme-rich fermented meat sauces. The oldest garum is fish sauce, and we will explore the science of its manufacture to unlock newer ways to produce fish sauce at home, fish fertilizer for your garden, and other meat sauces to amplify the sustainability and umami in your cooking.
